San Choy Bow

One of my favourite summer dishes, San Choy Bow is high in protein, low carb, quick and easy to assemble and this version includes a boost of nutrients. Just 30 minutes to prepare and cook, this recipe makes 4 servings.

Turkey mince is a great source of lean protein, abundant in the amino acid tryptophan which converts to our feel good hormone, serotonin. It also contains the same amount of iron as beef. Seaweed contains a wide range of nutrients, such as minerals like iodine and iron, plus it adds a great flavour to the mince mixture!

Ingredients:  

500g Turkey Mince

2 garlic cloves, diced

1 small brown onion, diced

1 medium zucchini, diced

1 bundle of Soba Noodles

2 tbsp dried seaweed

3 tbsp Tamari Sauce

2 tbsp Fish Sauce

1/2 red capsicum, thinly sliced

1 small carrot, thinly sliced

Raw cashews, finely chopped

Lettuce leaves - iceberg or cos lettuce work best

  

Method:  

  1. Brown off turkey mince, garlic and onion in a pan. Add zucchini and cook until softened.

  2. Cook soba noodles according to packet instructions. Once cooked, add to mince mixture along with tamari and fish sauce and seaweed.

  3. Serve mince mixture in lettuce leaves and top with chopped red capsicum, carrot and cashews.
